I know I'm probably jumping the gun worrying but I worry so.
My mare finished a course of regumate a week past friday (about 8 days now) and has been at the stud since, being shown the stallion every other day with absolutly no signs of coming into season at all. She normally is pretty silent about her season but I have seen her demo to a stallion before (she's a maiden) so was fairly sure she's show somewhat when there was a stallion around.
The plan at the moment is to scan her on Monday and see what stage she's at, possibly give a prostoglandin shot depending upon whats found and am starting to look at them AI'ing her if she is/has been in season and hasn't shown at all.

I'm a complete novice at all this, does this sound like a reasonably course of action to take with her or is there something else we should be doing?

Presuming she's not still transitional, this article may help explain things a bit for you.
