I was told this helps to get older mares in foal, would this work?

Putting them on regumate for 10 days then the injection to bring them in.....
Collects and AI the mare (not live cover)

Would this work? Why would it work better than naturally letting them come in? Why not live cover?

I dont know the answer to your other questions, but, live cover is much more risky. Especially with the older mare, even if the stallion and mare are both washed thoroughly, there is still a very high risk for contamination. In my opinion its always better to go AI if possible :-)

I do Regumate for 14 days and then prostin, makes for a decent cycle as to whether or not you get them in foal, that is up to your vet, God and the stud.

Check out the article on this site titled "I Gave My Mare Progesterone (Or Regumate), But It Didn't Work! (Aka Why Progestin Use May Not Result In Estrus In Mares)" (follow that link) - it should answer your questions re progestin use.

As far as why AI rather than live cover - see this article on AI. In a nutshell though, it's safer, and more effective!
