I have a bay mare who only has a tiny star. Her mother is a solid buckskin who has thrown another bay, a dun, and a palomino. The bay mare's sire is Chocolate Chic Olena, a sorrel with a blaze. I want to breed her to Cookin Merada, but I want to know what my foal's color possibilities would be and what the chances of getting a flashy paint foal would be.

58% bay
33%chestnut
8% black
If you don't know what other modifiers exist, it's pretty hard to determine anything further than that. If that stallion is splash, then divide the numbers up top by 2, and make 1/2 of them splash! (as in) 1/2 the bays will be bay splash, 1/2 the chestnuts will be chestnut splash, etc.

I know the stud is heterozygous black and recessive for agouti. Unfortunately idk the mares. He is a frame splash. Does this help?

Diana overo is a general term that includes frame, splash, and sabino so I don't understand the results you posted.
