Paint is a little trickier to establish as it just depends upon what genes are passed on. You could have a Tobiano, a Tovero, an Overo or a solid paint foal. Based upon APHA information sabino is classified as part of the Overo paint family so in general terms it is treated as an Overo gene and that's how I'm going to treat it also. I'm also excluding the 'liver' part as it's just a colour variable of the actual base coat colour. I'm also assuming this black mare is not carrying a hidden creme gene and therefore is not a smoky black (which are fairly rare).
Red Roan Tob Stallion x Sorrel Mare =
Sorrel/chestnut/Red Roan Paint possibilities are: Tobiano or solid.
Red Roan Tob Stallion x Gray Mare =
Sorrel/Chestnut/Red Roan Black/Blue Roan (black roan) Bay/Bay Roan Gray (It would be harder to spot roaning on a gray, so that's why it's just listed as gray but it very well could be a gray roan also.)
Paint Possibilities are: Tobiano or solid foal.
The gray mare is the hardest to pinpoint exactly unless you happen to know what colour she (the mare herself) was born as. Gray is just an extension of a base coat colour and is not the actual coat colour of the mare herself. If she was born as a chestnut/sorrel exclude the blacks & bays. If she was born as a black/bay the full colour list applies to her.
I'm assuming in the sorrel and gray mares that neither is hiding the Overo gene, so that's why I've excluded it. I'm also assuming that the stallion himself is not hiding the Overo gene.
Also I hesitate to use roan in any painted breed. I've personally seen too many Paints listed as a roan who are actually expressing the Overo Sabino gene. Unless you are 100% sure that one of that stallion's parents is a roan, I'd be suspcious of it actually being a roan.
These are all based on the general colours and paint patterns you have provided, they do not include hidden paint/colour genes.
